Thin Red Line comes from the Lazy Lady Farm in Westfield, Vermont. A layer of ash coats the bloomy rind of this 0ff-white goat cheese.  The rind has a chewy texture and mushroomy aromas.  A thin layer of smoked paprika down the middle adds a zesty contrast to this cheese’s delicate flavor.
