Shelburne Cheddar is  a traditional clothbound cheddar made in Vermont. Shelburne Farms uses the traditional English method of wrapping the cheese in cloth, then sealing in lard before letting it rest for two months before aging it in the caves at Jasper Hill. This hard cheese has a crumbly texture with a sharp, fruity and creamy finish.
