Winnimere is a seasonal raw cow’s milk cheese made by Jasper Hill Farm in Vermont. It is only produced from January through March, when the cows are producing rich milk with a high butterfat content. The gooey paste is soft, and has notes of  sweet cream, bacon and spruce. It is best enjoyed as a whole cheese, with the top of the rind removed and you can dig in with spoons!
