It’s all in a name and that is true for Moses Sleeper which is Jasper Hill Farm’s version of a French Brie. They named this luxurious cheese for a Revolutionary War scout who was friends with the namesake of Jasper Hill Farm’s very first soft- ripened cheese; Constant Bliss. It has a ridged bloomy-rind with a sticky, creamy interior that is dotted with air holes.
